Roasting

Think of roasting in 3 steps as though you are driving on to a highway…

1. Accelerate to get up to speed.
   
2. Slow down to settle into traffic
   
3. And then slow down to exit.

By lowering the oven temperature gradually you will find that you have better control and accuracy in reaching the desired doneness.
