Better Than Poached Microwaved Salmon Fillet

Better Than Poached Microwaved Salmon Fillet

When microwaving fish it is imperative that it be of the freshest quality (including defrosted frozen).  This method of cooking fish may change your whole approach to mealtime preparation.
Note:
Microwave ovens vary in power and performance so it is important to make cooking and power adjustment accordingly.  This recipe was done in an 800 watt oven.
1 lb. - 4 - 5 minutes
11/2 - 2 lb. - 6 - 7 minutes
2 lb. to 3 lb. - 7 - 8 minutes

Ingredients
1 lb. salmon fillet - cut in two - scales and pin bones removed
1 tsp. Hometown Number 1 Blended Seasoning
2 tbs. olive oil or 3 Tbs. melted butter.
Splash of dry white vermouth
Procedure
1.     Place prepared salmon fillet in microwaveable dish that just accommodates quantity.
2.     Rub Hometown Number 1 Blended Seasoning, vermouth and olive oil over fillets to distribute evenly.
3.     Place fillets skin side down in dish and cover securely.
4.     Place in microwave and set cooking time at 5 minutes at 100% power.  If your microwave is not equipped with a carousel you need to rotate dish twice during the cooking period.
5.     When time is done, allow fish to rest for 5 minutes.  Always check for desired doneness.
6.     Serve with cucumber dill sauce and steamed new potatoes.

CUCUMBER DILL SAUCE

1 cup cucumber - peeled, seeded and diced
1 pint sour cream
3 tsp. white vinegar
1 tsp. salt
1/8 tsp. cayenne pepper
2 tsp. grated onion
3 Tbs. finely chopped dill

Prepare all ingredients and combine
